Walnut Parsley Pesto & Joint Relief Juice
Today, parsley is widely used as a fresh garnish, but a sprig of parsley can provide much more than a decoration on your plate. The two most popular types of parsley are curly parsley and Italian flat leafy parsley. Being available all year round in your local supermarket.
Over the years, parsley has been used to treat conditions like high blood pressure, allergies, and inflammatory diseases. Parsley produces an essential oil that is antibacterial and has valuable detoxing properties. These essential oils give medicinal properties that supports a healthy function of the kidneys and bladder. Increases circulation that will strengthen blood vessels and the digestive system.
Parsley offers many more nutrients than people suspect: high in chlorophyll, vitamins A, C, and K, Folate and Potassium. Providing a rich source of antioxidants and flavonoids.
Walnut Parsley Pesto
Ingredients:
1. 4 oz. walnuts
2. 1 bunch parsley
3. 1 clove garlic
4. 1 oz. parmesan cheese 5. 4-6 Tbs olive oil
Instructions:
1. Wash & pluck parsley 2. Peel & chop garlic
3. grate cheese
4. grind walnuts
5. add everything + olive oil 6. blend
This recipe can be served over pasta, zucchini noodles, a dip, or a spread on a slice of bread!
Joint Relief Juice
Ingredients:
1 cup fresh pineapple, peeled, cored, & cut into large chunks
1 cup pear, unpeeled, & cut into large chunks
2 cups spinach
1 bunch fresh flat leaf parsley with stems
1/2 medium carrot, peeled
1/4 cup freshly squeezed grapefruit
(All ingredients should be chilled)
Instructions:
In juicer, process pineapple, pear, spinach, parsley, & carrot. If there is foam, you can skim it. Stir in grapefruit juice, chill if desired, & serve. Juice is best served immediately, but can keep refrigerated in an airtight container up to two days.
